How to Make Glazed Strawberry Scones

Preheat the oven to 375 degrees Fahrenheit.

In a mixing bowl combine flour, baking powder, 1 Tablespoon sugar, and salt.

In a mixing bowl, combine the flour and butter. Using 2 forks or a pastry cutter, crumble the mixture until it resembles breadcrumbs.

In a separate mixing bowl, combine the eggs and milk. Stir in the flour mixture.

Toss together the strawberries, fold them in, and stir to combine. Transfer the dough onto a parchment paper-lined baking sheet.

Cut the dough into 8 triangles and place them in the oven on a sheet of parchment paper cut to fit. Working with wet hands, pat the dough into a circle about 1/2″ thick. Cut the dough into 8 triangles and place them in the oven.

Remove from the oven after 20 minutes. After 5 more minutes, carefully separate the triangles and return to the oven for a final 5 minutes.

When the scones are done baking, add the powdered sugar and milk to make a glaze.

Drizzle the glaze over warm scones and allow to cool slightly before serving.

Tips for Making Glazed Strawberry Scones

  • Overworking the dough might result in tough scones. Mix until just well combined. Overmixing the dough can lead to tough scones.
  • Just enough flour should be added to keep the dough together. It will be sticky, and you may want to add more. DON’T DO IT! Too much flour might result in tough scones that are “heavy.”
  • Important baking tip. Before baking, split the scones after cutting but don’t separate them until after they’ve completed their first bake cycle. This will aid in the cleaning of the edges and make it easier to separate them.

Ingredients

  • 1 3/4 cups all purpose flour
  • 2 1/4 Tablespoons baking powder
  • 1 Tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 4 Tablespoons butter very cold
  • 2 large eggs
  • 1/3 cup milk
  • 2 cups strawberries chopped
  • 1 cup powdered sugar
  • 1 Tablespoon milk

Instructions

  1. Preheat oven to 375 degrees.

  2. In a medium mixing bowl, combine flour, baking powder, 1 Tablespoon sugar, and salt.

  3. Cut butter into little cubes and combine with flour mixture. Cut with pastry cutter or 2 forks until mixture is the crumbly.

  4. In a separate bowl, whisk together eggs and milk. Stir into the flour mixture.

  5. Fold in strawberries and mix to combine. Turn dough out onto a parchment paper lined baking sheet.

  6. Using wet hands, pat into a circle about 1/2″ thick. Cut dough into 8 triangles and place into oven.

  7. Bake for 20 minutes, then remove from oven. Carefully separate the triangles and return to oven for 5 more minutes.

  8. While scones are finishing baking, combine powdered sugar and milk and stir to make glaze.

  9. Drizzle glaze over hot scones and allow to cool a bit before serving.
