- 2 ⅓ cup all purpose flour
- ½ cup of cocoa powder
- 1 teaspoon baking powder
- Pinch of salt
- 1 cup of softened butter
- 1 ½ cup of brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- ¼ cup of granulated sugar for rolling
- Preheat the oven to 350 degrees.
- In a medium size mixing bowl cream butter and brown sugar, mix for 3 minutes.
- Add the egg and vanilla and mix for an additional 2 minutes.
- Next add cocoa powder, salt and baking powder. Mix until well incorporated.
- At this point I like to switch from my mixer to a spoon as the dough gets thick!
- Add the flour and stir until the dough is soft and smooth and uniform in color.
- Using a cookie scoop, make balls of dough and drop them into the granulated sugar and roll.
- Place the cookies 3” apart on a parchment lined baking sheet.
- Bake for 12 to 14 minutes, or until the tops no longer look glossy.
- Allow to cool for a few moments on the baking sheet before removing.
