Ingredients & Substitutions
Pumpkin Puree: You can also use Pumpkin Pie filling for this recipe, either will work! If you do use pumpkin pie filling your muffins will have a bit of a sweeter taste to them. You will also want to make sure that you are calculating that when you enter your WW points as pie filling often is more points than pumpkin puree.
Spice Cake Mix: Any brand of spice cake mix works great for these 3 ingredient pumpkin muffins. I personally prefer the Great Value or Aldi brand when I can find it! If you prefer, you can add a dash of pumpkin pie spice to elevate the pumpkin flavor even more in this recipe. I do that often in my pumpkin cinnamon rolls recipe and it turns out delicious!
Equipment You’ll Need for 3 Ingredient Pumpkin Muffins
I usually just hand mix these muffins since they are only three ingredients but you can also use a hand or a stand mixer. You all know that I love my Kitchenaid stand mixer and use it often.
The one thing that is a must for this recipe is a good muffin tin. I have used many over my years of baking but by far my favorite is the USA Pan Muffin Tin. The muffins just pop right out and you don’t have to worry about them falling apart or sticking to the pan. I also use the pan for things like corn muffins or even when I’m making my no-bake pumpkin cheesecake into cheesecake bites.

How to Make Weight Watchers Pumpkin Muffins
First, gather your ingredients…pumpkin puree, water, and a box of spice cake mix!
Mix all of your ingredients together. You don’t even have to use a mixer for this. A good ole fashioned wooden spoon and bowl will be just fine!
Fill your muffin cups with the batter and bake!

How to Store Pumpkin Muffins
I prefer storing these muffins in an air-tight container. You can also place them in a zippered storage bag. The biggest key to storing these and maintaining the moisture is to ensure wherever you are storing them is air-tight.
Can I freeze WW Pumpkin Muffins?
Yes! You can freeze these and save them for later. I like to make a double batch and then freeze the second batch for upcoming breakfast and/or dessert. They are also a great lunchbox snack for the kids.

- 1 box of spice cake mix
- 1 cup water
- 1 can of pumpkin puree (make sure you are not using pumpkin pie filling!)
1. Preheat oven to 350 degrees.
2. Mix spice cake mix, water and pumpkin in a medium sized bowl until well combined.
3. Place cupcake liners in a cupcake pan and fill each ¾ with mixture. (You can add a little sprinkle of brown sugar on top of each one if desired)
4. Bake for 20-22 minutes or until an inserted toothpick comes out clean
