The holidays are quickly approaching and I know that many of my readers LOVE the Grinch. He’s got an attitude that makes the holidays extra fun, and today I get to add to that with these cute Grinch cookies created from a cake mix cookie dough, food coloring, sweet icing, and decorative hearts.

White cake mix – You can use vanilla cake mix or even yellow cake mix for this Grinch cookies recipe instead of the box of white cake mix.

Large eggs – Allow the eggs to reach room temperature before mixing with the other ingredients. 

Vegetable oil – Canola oil or another neutral-tasting oil can be used. 

Powdered sugar – Sift this to prevent lumps in the frosting. 

Milk – Full-fat will provide the best flavor, but you can use reduced-fat milk instead. 

Vanilla – Use quality vanilla extract. 

Green and yellow food coloring – These two colors of food coloring are combined to create that perfect green Grinch color! Gel food coloring will always yield a better color and consistency. 

Red heart sprinkles – To complete the Grinch look, grab red heart sprinkles for these cookies! 

How to Make Grinch Cookies with Cake Mix

  • Preheat the oven.
  • Start mixing the cake mix, eggs, and vegetable oil together. 
  • Mix the yellow and green food coloring together to get the right green color. 
  • Place the cookie dough on the baking sheet in scoops.
  • Bake and then allow to cool. 
  • Make the frosting by combining the powdered sugar, milk, vanilla extract, and by adding 2 drops each of green and yellow food coloring. Stir well.
  • Check the consistency of the frosting and spread the icing on the cookies. 
  • Place a heart in the center of the cookies.

Grinch Cake Mix Cookies

These Grinch Cookies with Cake Mix are made using a white cake mix, powdered sugar, and vanilla as the main ingredients. Get ready to bite into sweet cookies because these are a GREAT holiday treat. Grinch Cookies for the win!

Ingredients

  • 1 box of white cake mix
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup powdered sugar
  • 1 tbsp milk
  • 1 tsp vanilla
  • Green food coloring
  • Yellow food coloring
  • Red heart sprinkles

Instructions

  1. Preheat the oven to 350 degrees. 
  2. Line a baking sheet with parchment paper.
  3. Add cake mix, eggs, and vegetable oil to a large bowl and stir well.
  4. Add equal amounts of green and yellow food coloring to get your desired “Grinch” color. I used 4 drops of each.
  5. Using a cookie scoop, drop scoops of dough onto a baking sheet, 1-2 inches apart.
  6. Bake for 9 minutes. Remove from the oven, and set the baking sheet on a wire cooling rack for one minute.
  7. Remove cookies from the baking sheet, onto the wire cooling rack. Allow cookies to cool completely.
  8. Mix the powdered sugar, milk, and vanilla in a small bowl. 
  9. Add 2 drops each of green and yellow food coloring. Stir well.
  10. Check the consistency. It should be just perfect - not too runny, and not too thick.
  11. Spread icing on the cookies.
  12. Place a heart in the center of the cookies.
