What is a Heath Bar Poke Cake?

A poke cake is a cake that has holes poked into it after baking. These popular cakes have holes that are filled with a variety of fillings, such as sweetened condensed milk, whipped cream, or fruit.

The holes are typically made with the end of a wooden spoon, large fork, or skewers, and the filling is simply poured over the top of the cake. It’s important to poke the holes while the cake is still warm, so that the filling can seep down into the entire cake easily. The result is a moist cake with a nice depth of flavor that extends throughout the sheet cake.

Poke cakes are named for the way you “poke” holes into the cake after it bakes, and then pour a filling over the top. This helps the cake to absorb more of the filling, giving it even more flavor.

Most poke cake recipes are a quick dessert that can be made ahead of time, which makes them super easy to make. And while I love a good from-scratch recipe, sometimes you just need something quick and easy!

This Heath Bar Poke Cake gets its name from the filling – a rich and creamy caramel sauce that is studded with Heath Bar pieces. The cake itself is a chocolate cake, which pairs perfectly with the caramel filling. And to top it all off, this cake is finished with a chocolate ganache made from heavy cream and dark chocolate.

The combination of flavors and textures in this Heath Bar Poke Cake is out-of-this-world good. The chocolate cake is moist and dense, the caramel filling is rich and gooey, and the chocolate ganache is dark and decadent. Trust me – this cake is worth every single calorie!

Ingredients and Substitutions

German Chocolate Cake Mix – Be sure to use a good quality chocolate cake mix for your cake – I love Duncan Hines German Chocolate Cake Mix. If you can’t find German Chocolate Cake Mix, any good quality chocolate cake mix will work just fine for your cake batter.

Caramel Ice Cream Topping – I love Smucker’s Caramel Topping! Again, it’s for those days when I want something I can whip up on a whim. Alternatively, I love a good homemade salted caramel sauce that has a bit more depth of flavor.

Chocolate Fudge Ice Cream Topping – Ghirardelli’s Premium Chocolate Sauce is our family’s favorite. At such an affordable price point, we get to enjoy chocolate fudge sauce that’s of good quality.

Heath Bar Cake From a Box Cake Mix FAQs

How do I store leftovers?

When storing leftovers of this cake (although I doubt there will be a lot of those!), keep it in an airtight container and refrigerate. I place mine in our glass storage containers with airtight lids.

How long can I keep these in the fridge?

When stored properly as suggested above, this cake will keep well for about 3 days. Although it’ll be highly likely you’ll finish the rest up by the next day!

What other fillings/toppings can I use?

Aside from the irresistible caramel and chocolate fudge combination that I use, I suggest a jam-like topping such as strawberry and blueberry. If this is something you want to be reserved for grown-ups only, you can use coffee with a dash of rum instead.

I have made this cake for years, probably 20 to 30. It is always a hit, although I use half a package of Heath bar chips, a large jar of caramel topping and real whipping cream. YUMMY, what’s not to like?
