What is spelt flour?
If you’ve never heard of or used spelt flour before, it’s a type of whole-grain wheat flour that is more easily digestible than other types of wheat flour. It is composed of the entire wheat kernel, including the bran and germ. Spelt flour has a nutty flavor and is higher in protein and fiber than all-purpose flour. You can find spelt flour at most major grocery stores in the health/organic section. If your local grocery store doesn’t have it check the health food stores or online.

  • Almond meal
  • Spelt flour

How To Make This Easy Apple Coffee Cake Loaf

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
  2. Combine the almond meal, spelt flour, cinnamon, baking powder, and soda in a large bowl. Add the coconut palm sugar and mix well. 
  3. In a separate bowl, add the eggs, and stir in applesauce and coffee until well blended. Pour the wet ingredients over the dry and mix until well blended and set aside.
  4. Combine the cinnamon, nutmeg, and coconut sugar for the topping in a bowl. Make sure that the spices are evenly distributed.
  5. Pour half of the batter into the prepared loaf pan, and sprinkle with half of the topping spice mixture. Reserve the other half of the topping for later. 
  6. Pour the remaining mixture on top and sprinkle the rest of the topping spice mixture on top, followed by the walnuts and a drizzle of the maple syrup.
  7. Bake at 350 degrees F (175 degrees C) for about 32-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let sit in the loaf pan for fifteen minutes before removing.
