Why Do We Love Rotisserie Chicken Salad?
While there are many chicken salad recipes with lots of twists and varieties, this recipe is my personal favorite. The delicious rotisserie chicken is smothered in the creamy sauce, and the crunchy veggies make it a super scrumptious meal that can be devoured in minutes.
Oh, and let’s not forget, the perfect seasoning adds just the right amount of zing and flavor to the bowl. You just can’t get enough of this tasty chicken salad.
I also love how convenient it is to use leftover rotisserie chicken, which saves time when you are looking for something quick. You can also use store-bought rotisserie chicken if you feel lazy or have too much on your plate.
Seriously, I could eat this chicken salad every single day for lunch and dinner. And the best part is you can serve it with different sides to make it more unique and fulfilling.
I love having it in a sandwich some days, on other days, I would serve it with a side of crackers. The crunch of crackers and the creaminess of the salad provide your taste buds with a heavenly experience.
Ingredients for Rotisserie Chicken Salad
- 6 cups cooked rotisserie chicken, deboned and coarsely chopped
- 1 cup pecans, coarsely chopped (optional)
- 2 stalks of celery, chopped
- 1 cup mayonnaise
- ½ cup sweet relish
- ¼ teaspoon celery salt
- ¼ teaspoon onion powder
How To Make Rotisserie Chicken Salad?
- Separate the chicken from the bones
- Dump all the ingredients along with the chicken in a bowl
- Mix it until everything is blended nicely
- Refrigerate for at least two hours or until ready to serve.
- Serve on crackers, celery sticks, croissants, or your favorite bread.
Can You Freeze Rotisserie Chicken Salad?
You can freeze rotisserie chicken for up to 3 months and use it as you need it in your chicken salad. The rotisserie chicken salad has some ingredients like mayonnaise which can change texture when frozen, so I don’t recommend freezing this salad. If you still want to freeze it, don’t add the mayo. Add the mayo after defrosting to avoid the texture and taste change.
How Long is Rotisserie Chicken Salad Good?
The great thing about rotisserie chicken salad is that you can make it ahead of time because it stays good for 3-5 days in the refrigerator. I always make some extra and store it in an air-tight container so I can enjoy the leftover chicken salad after a day or two.
Remember to stir all the ingredients nicely when you are using it again.
Why You’ll Love This Chicken Salad Recipe
There are so many different ways to utilize rotisserie chicken. I love this rotisserie chicken salad recipe because it’s quick and does not involve a lot of cutting and peeling. This chicken salad recipe is quick, healthy, and delicious. This makes it the best recipe for leftover rotisserie chicken.
