Peeps Cupcakes

When Springtime hits, we love being outside as a family. Levi LOVES being outside and now that Rebecca is a bit older, she does too! With Springtime, we look forward to Easter and the special meaning behind the holiday, as well as the family time together and the delicious food that we get to enjoy.

The kids and I enjoy our time together in the kitchen, and our new favorite treat is these Peeps cupcakes. Perfect for the Easter holiday, they are easy to make, and a great way to get the kids involved in baking.

Now, for an added bonus: these cupcakes take less than an hour start to finish. That’s just about the right amount of time for my little one’s attention span. It’s also the perfect neighbor or hostess treat because even in their simplicity, they are super elegant.

Summer Lemon Cupcakes

Hot Fudge Sundae Cupcakes

Get started on making your own peeps cupcakes and enjoy a festive treat! 

First, grab your cupcakes and other supplies.  Mix the food coloring with frosting in a small bowl. Add remaining food coloring and shredded coconut to a ziploc bag and mix until combined thoroughly.

Carefully add a layer of green frosting to the top of the cupcakes, then add a peep chick in the middle of each cupcake. Sprinkle the coconut “grass’ all around the chick, creating a nest. Serve and enjoy!

Store any leftovers in an air tight container in the fridge for up to 3 days.

Ingredients/Supplies:

  • 2 dozen white cupcakes, unfrosted
  • 1 can vanilla frosting
  • 1 cup shredded coconut
  • green food coloring
  • 24 Peeps Chicks
  • Small zippered bag

Directions:

  1. Put 3-5 drops of green food coloring into the frosting, stir well until all of the frosting is green.
  2. Put the coconut into the zippered bag.
  3. Add 3-5 drops of green food coloring to the coconut in the bag.
  4. Shake well, until all of the coconut is coated and is green.
  5. Frost the cupcakes.
  6. Place a Peeps Chicks in the center of frosted cupcake.
  7. Sprinkle green coconut on the top of the cupcake, around the Peeps Chicks.
