When Springtime hits, we love being outside as a family. During the months of March and April, we not only look forward to Easter and the special meaning behind the holiday, but the family time together. One of our favorite traditions is to make these delicious Peeps cupcakes.

Easter Cupcakes with Peeps

The kids and I enjoy our time together in the kitchen and even though it can get a bit messy, the memories we make are just so precious. The kids’ favorite treat to help make are these Peeps cupcakes. Perfect for the Easter holiday, they are easy to make, and a great way to get the kids involved in baking.

For an added bonus, this Peeps cupcakes recipe takes less than an hour to whip up from start to finish. That’s just about the right amount of time for my little one’s attention span. Because they are so quick to pull together, it’s also the perfect neighbor or hostess treat because even though they are quick to make, they look super elegant.

How to Make Peeps Cupcakes

To get started, first grab your cupcakes and other supplies. Mix the food coloring with frosting in a small bowl. Add remaining food coloring and shredded coconut to a Ziploc bag and mix until combined thoroughly.

The kids especially love helping color the coconut grass by shaking up the bag (or two if they each want to help) so make this a fun activity to help them feel involved.

Carefully add a layer of green frosting to the top of the cupcakes, smoothing it with a spatula. Then add a peep chick in the middle of each cupcake. Sprinkle the green coconut “grass” all around the chick, creating a nest. It’s as easy as that to put together super cute Easter cupcakes using Peeps!

How to Store Easter Cupcakes

To make sure your cupcakes stay fresh, be sure to keep them in an airtight container. If you have any that don’t get eaten, I recommend putting a piece of plastic wrap over the cupcakes, then adding your lid before placing it back into the refrigerator. This will help prevent moisture from getting into the cupcake and causing it to get soggy.

Leftover cupcakes can be stored in the fridge for up to 3 days.

Can I Freeze Cupcakes?

Yes, you can freeze cupcakes. To do so, wrap each cupcake with plastic wrap or aluminum foil. Place them in a resealable Ziploc bag. Be sure to put the date on the outside of the bag before placing it into the freezer for up to 3 months.

It’s best to decorate your Peeps cupcakes after you defrost them, if you’re not using the cupcakes immediately so the frosting and Easter candy taste freshest.

How Do You Defrost Cupcakes?

I find the best way to defrost cupcakes is to unwrap them and leave them out for an hour on your counter. If you’re short on time, carefully unwrap the cupcakes and place them on a microwave safe plate. Add 30-45 seconds of heat and check them every 20-30 seconds until they’ve defrosted completely.

Ingredients

  • 2 dozne white cupcakes unfrosted
  • 1 can vanilla frosting
  • 1 cup shredded coconut
  • green food coloring
  • 24 each Peeps Chicks
  • small ziploc bag

Instructions

  1. 1. Put 3-5 drops of green food coloring into the frosting, stir well until all of the frosting is green.

    2. Put the coconut into the zippered bag.

    3. Add 3-5 drops of green food coloring to the coconut in the bag.

    4. Shake well, until all of the coconut is coated and is green.

    5. Frost the cupcakes.

    6. Place a Peeps Chicks in the center of frosted cupcake.

    7. Sprinkle green coconut on the top of the cupcake, around the Peeps Chicks.
