  1. Add the chicken to the crockpot.
  2. Open and drain the cans of beans, pour them into the crockpot.
  3. Peel and chop the onion, then add to the crockpot.
  4. Rinse and prep the jalapenos.
  5. Prep the garlic cloves, add to the crockpot.
  6. Add chili seasoning, salt, and pepper to the crockpot.
  7. Add the chicken broth into the crockpot.,
  8. Cook on high for 4 hours or low for 6-8 hours.

Topping Options for Chili with Chicken

You may be used to enjoying regular chili with ground meat and beans, but chicken chili is a little different. A lot of people actually use this as a dip! Here are some topping options to consider when enjoying this meal:

Crockpot Chicken Chili

Yield: 4-6 servings

Ingredients

  • 1.5 lbs boneless skinless chicken breasts (about 2 chicken breasts)
  • 2 - 15.5oz cans navy beans
  • 1 - 15.5oz can cannellini beans
  • 1 medium yellow onion, chopped
  • 2 medium jalapeno peppers, chopped
  • 2 cloves of garlic, minced
  • 1.25 oz chili seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 32 oz chicken broth

Instructions

  1. Add the chicken to the crockpot.
  2. Open and drain the cans of beans, pour into the crockpot.
  3. Peel and chop the onion, then add to the crockpot.
  4. Rinse the jalapenos, the slice in half, remove and discard seeds. Chope jalapenos and add to the crockpot.
  5. Peel the layer off garlic cloves and mince, then add to the crockpot.
  6. Add chili seasoning, salt and pepper to the crockpot.
  7. Pour chicken broth into the crockpot, and stir for 30 seconds.
  8. Cook on high for 4 hours or low for 6-8 hours.
  9. Remove chicken from the crockpot and shred into chunks. Return chicken to the crockpot, stir and serve with sour cream and/or tortilla strips if desired.
