What’s a Rolo you ask? Only an individually wrapped piece of heaven that melts in your mouth with a burst of chocolate and caramel goodness. Seriously, if you haven’t ever had a Rolo before stop what you are doing right now and go get some!

How to Make Rolo Brownies

To make these fudgy Rolo brownies you will only need a few simple ingredients that you probably already have on hand and some Rolo candies, of course.

Ingredients for Rolo Brownies

You will need flour, cocoa powder, salt, melted butter, eggs, vanilla extract, and milk.

I’ll bet you have all of that in the pantry right now and you’re ready to whip up this chewy brownie recipe.

How to make Rolo Brownie Bites

Preheat your oven to 350 degrees, and spray your mini muffin tin with non-stick spray.

Mix your dry ingredients together in a mixing bowl, in a separate bowl whisk your eggs, and then add the vanilla extract and the milk.

Mix your wet ingredients with the dry ingredients and stir until just well combined. 

Spoon brownie batter into the prepared tin mini muffin pan until they are ½ way full, and then drop whole rolos onto the top of the brownie batter, one for each well.

Don’t press the Rolo candy down to the bottom of the tin or the melted caramel may stick to the bottom of your tins.

Fill the tins with the remaining brownie batter.

Bake your brownies then let them cool on a wire rack.

Serving Suggestions and Variations

These Rolo brownies are perfect on their own, but if you want to kick the decadence up a notch serve them with a scoop of vanilla ice cream or a dollop of whipped cream.

You could also add some chopped pecans or walnuts to your brownie batter. If you would like, you could also add some chocolate chips to the brownie batter for even more milk chocolate goodness. 

Make the baking process even easier by using a boxed brownie mix. To substitute the store-bought mix, follow the directions on the back of the brownie box, adding the Rolo chocolates to top of the batter before baking.

You sure can! These brownies will keep just fine at room temperature for 3 to 5 days. Just make sure that you keep them in an airtight container.

Do I have to make these in a muffin pan?

Absolutely not, you could also make these Rolo brownies in a baking dish. Make sure that you line the bottom of the pan with parchment paper. This will keep the caramel in your brownies from sticking to the pan, and it also makes removing the brownies from the pan in one piece a breeze. 

Can I freeze these brownies?

Yes, you can freeze these brownies. This works best by wrapping each brownie in plastic wrap and then freezing them individually. Set the brownies out to come to room temperature when you are ready to enjoy them again. 

Do I have to make these brownies from scratch?

No, if you have a favorite boxed brownie mix you can use that instead. Just add your Rolo candies to the brownie batter after following the box directions.

Ingredients

  • 1 cup flour
  • ½ cup cocoa powder
  • 1 cup sugar
  • 1 teaspoon salt
  • 2 eggs
  • ½ cup butter, melted
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 24 Rolos

Instructions

  1. Preheat the oven to 350 degrees. Grease a mini muffin pan with cooking spray or butter. Set aside. 
  2. In a large mixing bowl, combine dry ingredients. Set aside.
  3. In a medium mixing bowl beat eggs. Add butter, vanilla and milk. 
  4. Mix wet ingredients slowly into the dry ingredients until just incorporated. 
  5. Use a spoon or cookie scoop to fill each muffin cup with batter, fill half way. Press a rolo into each muffin cup then cover the rest of the way with batter.
  6. Bake in the oven for 14-15 minutes.

Notes

  • Don’t press rolos too deep into the muffin tins, if they touch the bottom they will leak caramel out the bottom and stick to plates. 
  • Store in an airtight container on the counter for 3-5 days. This dessert does not freeze well, best served fresh.
