This make-ahead casserole is a great breakfast for popping in the oven to bake while you open presents on Christmas morning. A great thing about this recipe is that it is very versatile so you can add ingredients in that your whole family will love.

What is a casserole?

If you aren’t familiar with what a casserole is, then you are in for a surprise. Mostly, a casserole is a bunch of ingredients mixed together, when it’s done, you have one dish that is cut up into single-serving sizes. Most casseroles have meat, pasta, and cheese!

Now that you know you want to make this casserole, you may be wondering what ingredients you need to make it. These simple ingredients are everyday products that you may already have on hand.

  • Eggs – This casserole calls for the usage of eggs! I prefer Aldi’s brand of large eggs for any cooking I do.  
  • Milk – Another simple ingredient that will help bring this breakfast casserole to life, is milk. I use 2% but you can use whole or skim milk.
  • Sausage – My favorite casseroles for breakfast involve using pork sausage. I personally use mild sausage but you can add hot sausage for a spicier flare on this Christmas morning breakfast.
  • Red and green bell pepper – Get ready to taste deliciousness thanks to the red and green bell pepper addition. 
  • Shredded cheddar cheese – Trust me, you’ll want to add the sharp cheddar cheese to this casserole. I use 2% shredded cheese from Aldi or Walmart.

Don’t forget to add salt and pepper to taste. Everyone likes different amounts of salt and pepper, so add what you feel most comfortable with!

How to Make Christmas Breakfast Casserole

This is called a Christmas Breakfast Casserole for a reason. It’s super easy to make, which is why this is a go-to recipe in our house. No one wants to be stressed out on Christmas morning.

This recipe is also low-carb, so you don’t have to worry about loading yourself up with carbs the day of making this casserole.

  1. Go ahead and preheat the oven and prepare your pan. 
  2. Whisk together the milk, eggs, and seasonings. 
  3. Brown the sausage on a pan while you are whisking together the other ingredients. 
  4. Add the cooked sausage, bell peppers, and cheese into the greased prepared pan or baking dish. 
  5. Pour the egg mixture on top of the casserole.
  6. You can either bake it now or store it in your frdige and bake the next day!

Tips for Making this Christmas Breakfast Casserole

  • Make this casserole the night before – There is no doubt in my mind that Christmas morning is already stressful enough. Make this casserole the night before, cook it on Christmas morning, and then enjoy it before or after you’ve opened all the gits.
  • Freeze the casserole – You can make an extra casserole for later! Simply make two Christmas Morning Breakfast Casseroles and then enjoy one later.
  • Mix up the ingredients – If you’d like to add another meat to this casserole you can! Feel free to add different veggies and various kinds of cheeses! This breakfast casserole is a great basis for making any casserole.

How to Store Overnight Breakfast Casserole

Once you’ve made your Christmas breakfast casserole, you can easily place it in the fridge for the next morning or freeze it. Just make sure it’s in an airtight container or wrapped in plastic wrap.

It can be kept in the fridge for 3-4 days or in the freezer for up to three months. Also, be sure to let it cool to room temperature before placing it in the fridge or freezer.

Ingredients

  • 12 eggs
  • ½ cup milk
  • Salt and pepper to taste
  • 1 pound sausage, browned, crumbled, and drained
  • 1 red bell pepper, seeded and diced
  • 1 green bell pepper, seeded and diced
  • 2 cups shredded cheddar

Instructions

  1. Preheat the oven to 350 degrees. Prepare a 9x13 baking dish with nonstick cooking spray.
  2. Whisk together the eggs, milk, salt, and pepper until well blended.
  3. To the baking dish, add the sausage and diced bell peppers. Top with cheese. 
  4. Pour the eggs over the top of the mixture.
  5. If baking in the morning, cover tightly and store in the refrigerator overnight. Remove from the refrigerator about 30 minutes prior to cooking or while the oven preheats.
  6. Bake for 40 to 45 minutes or until the center is set and the cheese is melted and golden on the edges.
