Ingredients used in Spring Unicorn Cupcakes

- 1 box of French Vanilla cake mix- Having a premixed french vanilla mix will simplify the process.
- 3 eggs- Eggs are a must-have for any type of cupcake.
- 1/2 C (1 stick) of softened unsalted sweet cream butter- The butter will help keep your cupcakes moist and super delicious.
- 1 C whole milk- This will make cupcakes’ texture lighter and not dense.
- 1 C Funfetti Jimmy Sprinkles- Sprinkled adds a touch of magic to these already delicious spring unicorn cupcakes.
How to Make Spring Unicorn Cupcakes
- Preheat oven to 350 and line cupcake pan with the liners
- In a medium bowl, combine the cake mix, butter, milk, and mix until combined
- Mix in the sprinkles until combined
- Fill the cupcake liners 3⁄4 way full
- Bake in the oven for about 21 minutes
- Pull out and place on the side to cool
Vanilla Frosting Ingredients
- 3 C unsalted sweet cream butter, softened
- 6 C powdered sugar
- 5-7 tbsp. heavy whipping cream
- 2 tsp. vanilla extract
- 1 large piping bag fitted with a star tip
- 3 C Unicorn Funfetti Jimmy Sprinkles
- 1 package of Wilton Unicorn Icing Decorations (Found at Walmart and Michaels)
Frosting Directions
- Using a standing mixer combine the butter, powdered sugar, heavy whipping cream, vanilla, and mix on medium speed until combined and smooth.
- Scoop frosting into the large piping bag.
- Pipe a thick ring of frosting around the top of the cupcake.
- Dip the cupcake into the sprinkles to coat the frosting ring.
- Pipe a dollop onto the centre of the cupcake.
- Place the Unicorn Horn and Ears from the icing package into the centre frosting dollop.
