I am a huge meatloaf fan…my hubby, not so much. I have tried for years to find a recipe for meatloaf that he likes and he has never been a huge fan. Then, I decided that I needed to come up with my own meatloaf recipe that combined flavors that my hubby likes with the meatloaf flavor I love…and it was a winner! I’m excited to share one of my new favorite recipes with you…mini meatloaf muffins.

Mini Meatloaf Muffins
Ingredients
- Meatloaf:
- 2 lb Ground Beef or ground meat of choice
- 1 Cup Panko Bread Crumbs
- 1 Egg
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic salt
- 1/2 tsp. hot sauce
- 3 Tbsp. ketchup
- 3 Tbsp. BBQ sauce
- 1 tsp. Worcestershire sauce
- Topping Sauce:
- 3 Tbsp. ketchup
- 5 Tbsp. BBQ sauce
- 1 tsp. Worcestershire sauce
Instructions

Pre-heat oven to 375 degrees

Combine all ingredients for meatloaf in bowl

Add meatloaf ingredients to greased muffin tin

Bake at 375 degrees for 20-30 minutes

Combine sauce ingredients in small bowl

Brush sauce on top of muffins

Bake at 375 degrees for 10 minutes

Remove from oven and enjoy!

I love meatloaf muffins! It's now the only way I make meatloaf. I like it for the portion control and it faster cooking time. I'll definitely have to try your recipe the next time I make it.
