Who says you can’t have apple pie for breakfast? Well, now you can! This Baked Apple French Toast recipe is the best of both worlds. Cinnamon apple flavors pair perfectly with French toast to give you an easy-to-make breakfast.

This make-ahead French toast bake is perfect for making for family brunch or slumber parties. Just pop it in the oven, and it’s ready in under an hour.
This comforting breakfast is a family favorite in our house. My kids love this recipe because they top it with maple syrup or whipped cream.

Can I make my Baked Apple French Toast early?
Absolutely! I actually recommend preparing it the night before. This allows the bread to really soak up the mixture overnight. That way, in the morning, all you have to do is spread on the crumb topping, bake, and you’re good to go.
What apples should I use for my Baked Apple French Toast?
I like to use Gala, Honeycrisp, or Pink Lady apples. They hold up the best under heat and don’t turn into much as soon as they start to warm. They’re all super juicy and bring a delicious flavor to Apple French Toast.
How should I store my leftovers?
Storing this Baked Apple French Toast is actually super simple! Place your leftover casserole in the fridge for three to four days. You can use an airtight container or place plastic wrap over it.
To reheat, warm in the microwave for 25 to 20 seconds.
I don’t recommend freezing this recipe. It turns into mush when you try to warm it up.
Recipe Tips:
- Make sure that you use old bread. While soft bread is absolutely delicious, this recipe really needs something a little more firm. That is why it is perfect to use french bread or sourdough bread.
- Make it the night before. This recipe needs to sit in the fridge overnight so that the bread pieces soak up all of the mixture before baking the next day.
- Be sure to chop your apples into pieces. If you thinly slice them, they will get soggy and won’t bake properly.
Baked Apple French Toast Ingredients:
Apples: I like to use Gala apples for my Apple French Toast, but you can use Fuji, Honeycrisp, or Pink Lady.
Sugar: The apples and french toast are both sweetened with granulated sugar. You will use light brown sugar, which is perfect for crumb topping.
Cinnamon: Cinnamon is the main spice that is used in this recipe. It is warm and goes well in this comforting breakfast food.
Bread: This is one of my favorite ways to use leftover bread! You’ll need an old loaf of french bread and brioche bread. Sourdough works well, too.
Milk: For this recipe, I recommend using whole milk, but if you only have 2%, that will work.
Vanilla Extract: I like to use pure vanilla extract in my baked french toast because it adds the best flavor.
Flour: All-purpose flour is great when you’re making a delicious crumb topping.
Rolled Old Fashioned Oats: Any rolled oats will work here. Just double-check that you don’t accidentally pick up flavored oatmeal.
Salt: This flavor enhancer brings out the apple cinnamon in this baked french toast recipe. I like to use Kosher salt.



How to Make Baked Apple French Toast:
The Day Before:
Prepare: Spray a 9×13 baking dish with pam baking spray and set aside.
Combine: Using a large bowl, mix the apples, sugar, and cinnamon. Set aside. Using a large bowl, combine the french bread and the brioche bread. Sprinkle half of the bread mixture into the baking dish. Toss the other half of the bread mixture with the apples and then pour the mixture into the baking dish.
Whisk: Using a large bowl, whisk the eggs until lightly beaten. Whisk in the milk, 1⁄2 C sugar, 2 tsp pure vanilla extract, and 2 tsp ground cinnamon
Coat: Pour the milk mixture over the bread and apples into the baking dish. Lightly press the bread mixture down to make sure it becomes completely coated in the milk mixture.
Wait: Cover with plastic wrap and place into the fridge overnight.
The Next Day:
Preheat: Preheat the oven to 350 degrees and remove the french toast from the fridge and allow it to rest on the counter for 30 minutes.
Combine: Using a medium bowl, make the crumble by whisking the flour, oats, brown sugar, cinnamon, and salt until combined, then add the butter cubes. Cut the butter into the dry ingredients using a pastry or fork to create a crumble mixture.
Bake: Sprinkle the crumble mixture on top of the french toast and bake in the oven for 45-60 minutes or until the top is set and firm in the middle. If needed, tent with foil and bake for an additional 10-15 minutes or until the center is set.
Serve: Remove from the oven and cool for 45 minutes before serving. Serve with maple syrup and fresh whipped cream!

Ingredients
Apple Mixture
- 3 C gala apples, chopped
- 3 tsp sugar
- 1 tsp ground cinnamon
French Toast Mixture
- 1 day old loaf of french bread, cubed into 1 in pieces
- 1 day old loaf of brioche bread, cubed into 1 in pieces
- 2 C whole milk
- 1⁄2 C sugar
- 2 tsp pure vanilla extract
- 2 tsp ground cinnamon
Crumb Topping
- 1⁄3 C flour
- 1⁄3 C rolled old fashioned oats
- 1⁄2 C light brown sugar
- 1 tsp ground cinnamon
- 1⁄4 tsp kosher salt
- 1⁄4 C unsalted sweet cream butter, cold and cubed into small pieces
Instructions
