We all want to stick to a healthy diet, but let’s be honest… we don’t LOVE to cook a healthy breakfast every morning. Sometimes we’re in a rush and just don’t have time.
I struggle with breakfast, I either ‘forget’ about it and end up starving at lunch or I end up grabbing something quick for breakfast that is not all that healthy.

Bacon Egg & Cheese Biscuit Ingredients & Substitutions:
Self-rising flour – Regular flour could also be used, but then you’ll likely need to add baking powder or soda to get a good rise in these homemade biscuits.
Greek yogurt – You can also use non-fat plain yogurt. Don’t use flavored yogurt. Sour cream could be used instead of yogurt.
Garlic powder – This adds a delicious aromatic and savory flavor to the warm biscuits.
Eggs – I’ve used large whole eggs. You can load scrambled eggs on these flaky biscuits if you don’t want egg patties.
Bacon – Fully cooked, crispy bacon. If you don’t want to use strips of bacon on these English muffins, use crumbled breakfast sausage or patty instead. Turkey bacon can also be used to reduce the fat content of regular bacon.
2% milk American cheese – You’ll need 4 slices. Shredded sharp cheddar cheese or Pepper Jack cheese are other great options for this cheese biscuit sandwich.
How To Make Bacon Egg & Cheese Biscuits
- Preheat your oven.
- Mix flour, salt, garlic powder, and yogurt until there are no crumbles left in the bottom of the bowl, and make sure the sides of the bowl are mostly “clean” and the dough looks well combined.
- Lay out the biscuit dough on a floured surface. Pat out the dough until it’s about ½ inch thickness. Using a biscuit cutter (sprayed for non stick cooking spray) cut out 9 biscuits.
- Spray a baking sheet with non stick cooking spray and lay biscuits 2 inches apart. Bake for 19-22 minutes or until golden brown on top.
- While your biscuits are baking using a fork and a medium bowl, whisk together 7 eggs with a pinch of salt and a pinch of pepper (I like white pepper) . Spray a large skillet with non stick cooking spray and cook eggs on low heat. Cook until edges are done and then flip over. Continue cooking until eggs are done. You should be able to slide your cooked egg right out of the pan onto a flat, clean surface.
- Using your biscuit cutter, cut out 9 egg rounds and lay ½ slice of cheese on top.
- Heat your pre-cooked bacon in the microwave as directed on the box and dab any extra bacon grease with paper towels once bacon is cooked and crispy.
- Using a knife, cut each biscuit in half. Place a cheese topped egg round on the biscuit then one strip of bacon on top of that, and sandwich together with the top of the biscuit.
Serve
Enjoy these breakfast sandwiches with your favorite brand of hot sauce and other toppings, such as caramelized onions. They are great on their own or with my Slow Cooker Hash Brown casserole!
How To Store Bacon Egg & Cheese Biscuits
Wrap leftover bacon egg and cheese biscuits in aluminum foil and store them in an airtight container in the fridge for 4-5 days.
When ready to enjoy, unwrap them and reheat the individual sandwiches in the microwave.
Can I Freeze Bacon Egg and Cheese Biscuits?
You can also freeze these bacon egg and cheese biscuits in the freezer for up to 2 months.
Thaw them overnight in the fridge and reheat them in the microwave or oven. Keep in mind that the texture of the egg patty may change from freezing and thawing.

Absolutely! Pillsbury Grands biscuits or another brand can be used instead of making the biscuits from scratch. I really like the Aldi brand of butter biscuits!
