How to make these easy sugar cookies

  1. Preheat oven.
  2. Mix butter, oil, sugars and vanilla in large bowl.
  3. Whisk flour, baking powder and cream of tartar in separate bowl.
  4. Add dry ingredients to the wet ingredients.
  5. Scoop batter onto baking sheets with parchment paper.
  6. Bake, then allow to cool.
  7. Frost if desired.

What makes these cookies super soft?

The addition of the oil plus the butter is one of the reasons these cookies are so soft. The extra secret is that you will take them out of the oven just before they are done baking. Allow them to cool for 2 minutes on the baking sheet, before moving to wire racks.

Ingredients

  • 1 cup butter softened
  • 1 cup vegetable oil
  • 1 cup powdered sugar
  • 1 cup granulated sugar
  • 2 Tablespoons granulated sugar for sprinkling on cookies
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 4 & 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cream of tartar

Instructions

  1. Preheat the oven to 375F.

  2. In a large mixing bowl, beat together the butter, vegetable oil, sugar, powdered sugar, and vanilla extract until smooth. Beat in the eggs one at a time until combined. Set aside.

  3. In a large mixing bowl, whisk together the flour, baking powder, and cream of tartar. Add half of the flour mixture to the wet mixture and beat just until combined. Add the remaining flour and beat until all flour is combined, but do not over mix.

  4. Scoop the batter into 1 to 1 ½ inch balls onto baking sheets lined with parchment paper.

  5. Sprinkle the top of each cookie with a pinch of granulated sugar.

  6. Bake the cookies at 375F for 8-10 minutes, until they begin to lightly brown around the edges.

  7. Remove the cookies from the baking sheet with a spatula and cool slightly on a wire cooling rack.
