Ingredients for Lemon Sugar Cookie Recipe

These cookies are special to me because they have so much flavor! That fresh lemon flavor will have you hooked from the first bite.

  • 2 sticks of softened butter
  • 2 ½ cups of flour
  • 1 ½ cup of sugar + ¼ cup for rolling
  • 1 teaspoon vanilla
  • 3 teaspoons lemon juice
  • 3 teaspoons of lemon extract
  • 1 egg
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • A pinch of salt

Make sure you have enough ingredients to make a few batches of these cookies! You’ll be glad you made more than one batch.

How to Make Lemon Sugar Cookies

  1. Cream butter and sugar together .You want the butter and sugar to be as fluffy.
  2. Add the other ingredients according to the recipe.
  3. Add in the flour, ½ cup at a time. I like to mix by hand in this step as the dough gets thick.
  4. Preheat the oven to 350 degrees.
  5. Refrigerate the dough for 30 minutes.
  6. With a cookie dough scoop, form little mounds of dough.
  7. Drop them into the sugar you sat aside for dusting.
  8. Bake according to the recipe and be careful not to overbake.
  9. The cookies should look lightly golden in color when they are ready.
  10. Allow to cool on the cookie sheet for about 5 minutes before removing.

Lemon Sugar Cookies

Instructions

    1. Cream butter and sugar together for 3 minutes. You want the butter and sugar to be as fluffy as possible.
    2. Add the egg and mix for 1 minute.
    3. Add vanilla extract, lemon extract and lemon juice.
    4. Mix and begin adding the baking powder, baking soda and salt.
    5. Add in the flour, ½ cup at a time. I like to mix by hand in this step as the dough gets thick.
    6. Preheat the oven to 350 degrees and refrigerate the dough for 30 minutes.
    7. With a cookie dough scoop, form little mounds of dough.
    8. Drop them into the sugar you sat aside for dusting, roll them in the dough so they are completely covered with sugar.
    9. Place them on a lightly sprayed cookie sheet, about 3” apart. The dough will spread, so leave ample room!
    10. Bake for 10-13 minutes, being careful not to overbake. The cookies should look lightly golden in color when they are ready.
    11. Allow to cool on the cookie sheet for about 5 minutes before removing.
