Here is an easy copycat Taco Bell Enchirito recipe for one of Taco Bell’s most popular menu items, that you can make right in your own kitchen.
This is probably one of the fan-favorite menu items, but because it’s not always available, satisfying that craving can be difficult. But with this recipe, you can make your own enchiritos at home whenever you want! And the best part is, they are just as good (if not better) than the ones you would get at Taco Bell.
What is an Enchirito?
What is an enchirito you ask? Only one of Taco Bell’s most popular menu items, when they offer it on the menu that is! Currently, the original Taco Bell enchirito is not available at Taco Bell which makes it the perfect time to try these copycat Taco Bell enchiritos at home.
An enchirito is a perfect combination of a burrito and an enchilada melded together for a mouthful of Mexican flavor and deliciousness.
When the Taco Bell taco is available on the menu the Taco Bell menu describes them as “a warm soft flour tortilla wrapped around seasoned ground beef, hearty beans, diced onions, real cheddar cheese, and tangy red sauce”.
So it makes sense that to make your own version of homemade enchiritos you will need flour tortillas, cheese, refried beans, ground beef, diced onions, and red sauce. Pretty basic ingredients that you might already have at home!
How to Make Copycat Taco Bell Enchiritos
Now if you really love the flavor of Taco Bell seasoned meat, you might want to pick up a Taco Bell seasoning packet at the grocery store. Otherwise, you can make your seasoned ground beef with any taco seasoning that you have at home, or use the taco seasoning blend in this recipe.
Ingredients for Taco Bell Copycat Enchiritos Recipe
- ground beef
- all-purpose flour
- chili powder
- salt
- dried minced onion
- paprika
- onion powder
- garlic powder
- water
- refried beans
- flour tortillas
- onion
- red enchilada sauce
- cheddar cheese
If you want your ground beef to be fine, like the meat that you get at Taco Bell try using a potato masher when cooking the taco meat in your large skillet. Drain and season your seasoned beef mixture and get ready for the next step, which is heating up your refried beans. Just heat them in the microwave until they are warmed through.
Get your diced onion, shredded cheese, and enchilada sauce together and you are ready to assemble your copycat version of enchiritos.
Heat your tortillas in the microwave and then lay your tortilla out flat and put 3 tablespoons of beans in the center of it then put 3 tablespoons of beef on top of the beans. Add some diced onions to the top of the ground beef, and then fold your burrito and put it on a plate seam side down.
Put your enchirito on a microwave-safe plate, spoon about two tablespoons of enchilada sauce on top of the enchirito and sprinkle your shredded cheddar cheese on top of that.
Microwave the smothered burrito until the cheese melts on top, then garnish with green onions, olive slices and sour cream on your finished product.
Storing Your Enchiritos
These Taco Bell copycat enchiritos are perfect for lunches, or a quick after-school snack. You can make them and put them in individual airtight microwave-safe containers that can be heated when you are ready to eat one. You can keep these enchiritos assembled in the fridge for 3 to 5 days.
Family Size Enchiritos
Do you need enough Taco Bell enchiritos to feed the whole family? Not to worry, you can make your enchiritos and put them in a greased baking dish. Top each one with enchilada sauce and shredded cheese, and then bake them in a 350-degree oven until the cheese is melted.
Enchiritos Toppings and Variations
It may not be Burger King, but it’s your kitchen so you can have these enchiritos your way! If you want to add diced bell peppers or jalapenos to the pan when you are cooking your ground beef do it!
If you need to stretch your meat out a little further, you could also consider adding white rice or Mexican rice to your enchiritos.
For toppings, you might consider adding sliced black olives or pickled jalapenos. Green onions, salsa, pico de gallo, and sour cream would also make a great topping for your enchiritos. Taco sauce is also a great option to have available for people who like a kick to their dinner.
Make it a taco bar variation and set out bowls with different toppings for your family or friends to make their taste buds happy with their version of the perfect mix of an enchilada and tasty toppings.
Serving Suggestions
If you are serving a casserole dish of enchiritos to the family for dinner, you might be wondering what to serve with it.
Like most Mexican food dishes, a tossed salad, Mexican rice, or corn on the cob would all complement this dish nicely.
I also love dipping my enchiritos in guacamole or salsa, and you could add a bowl of chips to the table for that as well.
For dessert, you might want to consider serving up a plate of churros or sopapillas. Or keep it simple with a bowl of fresh fruit.
Frequently Asked Questions
Although this copycat recipe is pretty straightforward, here are a few frequently asked questions that might help you out.
Do I need to heat the tortillas before assembling my enchiritos?
If you want your tortillas to be nice and soft, then yes, you will want to give them a quick nuke in the microwave before assembling your enchritos.
Can I make these enchiritos ahead of time?
You can, but I would not recommend assembling them too far in advance as the tortillas might get a little bit soggy. If you want to make them ahead of time, cook your ground beef and refried beans and have everything else chopped and ready to go. Assemble them right before you are ready to eat.
Can I use homemade enchilada sauce?
Of course, you can! If you have a recipe for homemade enchilada sauce, or you keep a jar of it ready to go in the fridge, feel free to use that in place of the store-bought red sauce.
Can I use a different cheese?
Yes, if you don’t have shredded cheddar cheese on hand you can use what you do have in the fridge. Pepper jack, Colby jack, Mexican shredded cheese, or cotija cheese would all do well in this recipe.
