Coconut Snowball Cookies

Yield: 18 cookies

Ingredients

  • 1 c soft butter, unsalted
  • ½ c sweetened condensed milk
  • 2 c flour
  • 3 teaspoons of baking powder
  • 1 teaspoon of almond extract
  • ½ c powdered sugar
  • 1 cup of sweetened shredded coconut

Instructions

    1. Preheat the oven to 325 degrees.
    2. Prepare a cookie sheet by lining with parchment paper, a silicon mat or lightly spraying with cooking spray.
    3. Beat butter until it is fluffy.
    4. Add sweetened condensed milk (scrape as much out of the measuring cup as possible!) and beat for 2 minutes.
    5. Add the almond extract and blend for 30 seconds.
    6. Add baking powder and stir for 30 seconds.
    7. Add flour, stirring until incorporated.
    8. Add coconut and stir for a few seconds.
    9. Using a medium cookie scoop, drop the dough onto the cookie sheet, leaving about an inch of space between the cookies.
    10. Bake for 12 minutes.
    11. Allow the cookies to cool for 10 minutes on the cookie sheet, then lightly dust with powdered sugar.
