Coconut Cake is a great treat year round

A great kid friendly dessert that the whole family will love! 

Equipment:

13×9 sheet pan or  (2) 8 inch round pans sifter, mixer, mixing bowl, and spatula

Ingredients:

– AP flour – corn starch – baking powder, salt  – unsalted butter  - granulated sugar – vegetable oil

– sour cream – vanilla extract – coconut extract - coconut milk – 5 eggs – cream of tartar

– shredded coconut – softened cream cheese – unsalted butter.  - icing sugar – coconut milk – vanilla extract

Instructions:

1. Preheat the oven to 350 degrees 2. Spray cake pans with non stick baking spray

3. Sift together flour, corn starch, baking powder, salt in a bowl and set aside.

4. Cream together the butter, sugar and vegetable oil until creamy.

5. Add sour cream, vanilla, coconut extract, and mix.  6. Add the sifted dry ingredients and coconut milk, mix then set batter aside.

7. Whip eggs, once foamy add the cream of tartar.  Continue to whip until a soft stiff peak forms in the egg whites.

8. Fold the egg whites into the cake batter until there are no more streaks in color. 9. Pour into prepared cake pan(s)

10. Bake for 30-40 mins, Rotating the pan(s) at the 20 min mark to ensure even baking.

For Frosting:

Cream the cream cheese and butter until smooth.  Add sugar, coconut milk, and vanilla.

Beat on medium high for 3-4 mins until well combined
