Honestly, not every recipe needs to be serious…sometimes, the best ones are messy, sweet, and totally kid-approved. Whether you’re using plastic cups or a cute popsicle mold, these are bound to be a hit.

Why These S’mores Ice Cream Pops Are So Fun

This is one of those popsicle recipes that checks all the boxes: easy, no bake, and perfect for birthday parties, summer BBQs, or just a fun afternoon at home. Plus, this is a great opportunity to get the kids in the kitchen. Want to make memories? Hand them a popsicle stick and let them get creative.

You don’t need a campfire or even an ice cream machine to make these mores ice cream treats happen—just a few pantry staples, a hand mixer, and a little freezer space.

Ingredients You’ll Need

  • Vanilla ice cream or marshmallow ice cream
  • Marshmallow fluff
  • Milk or heavy cream
  • Crushed graham crackers or graham cracker crumbs
  • Melted milk chocolate or dark chocolate
  • Magic shell or homemade chocolate mixture
  • Optional: chocolate pudding, peanut butter, or regular chocolate chips

You’ll also need my favorite popsicle molds.

How to Make S’mores Ice Cream Popsicles

  1. Make your base
Start by softening your vanilla or mores ice cream until it’s room temperature but not melted. In a medium bowl, combine the ice cream with marshmallow fluff and a splash of heavy whipping cream or milk. Use a hand mixer to beat until you reach soft peaks, then continue mixing until you see stiff peaks start to form. You’re aiming for that smooth, thick milkshake texture.
  2. Prepare the molds
Grab your favorite popsicle mold, paper cups, or even plastic cups. Sprinkle a layer of graham cracker crumbs in the bottom of each mold to mimic that traditional s’mores crunch.
  3. Pour and freeze
Carefully spoon or pour your ice cream mixture into the molds. Gently tap the molds to remove air bubbles. Slide in a popsicle stick and freeze for at least 3 hours.
  4. Dip and decorate
Once frozen solid, remove from the freezer and dip each pop into melted chocolate or a homemade chocolate layer made by warming regular chocolate chips over medium heat with a splash of heavy cream. While the chocolate is still melty, sprinkle with graham cracker crumbs and a drizzle of peanut butter, if desired.

Tip: If your pops are stuck in the mold, run them under warm water for a few seconds to loosen.

  1. Freeze again (optional)
To help the toppings set, pop the decorated ice pops back into the freezer for 10 minutes.

Why This Is the Perfect Summer Treat

Sure, store-bought pops are fine….but there’s something extra special about making your own mores ice cream at home. It’s fun, affordable, and way more delicious than anything you’d find on the ice cream trucks rolling through the neighborhood. These frozen treats are like a homemade bomb pop, but with graham crackers and chocolate instead of red and blue dye.

Whether you’re sharing on social media or just whipping up a batch to enjoy on your porch, this recipe is always a good idea.

Final Tips

  • Want to mix it up? Add chocolate pudding for a richer texture or dark chocolate for a more intense flavor.
  • Don’t skip the graham cracker crumbs….you’ll want that crunch!
  • Store leftovers in a sealed container to avoid freezer burn (though they probably won’t last long).

Ingredients

  • 3 Cups Vanilla Ice Cream
  • 2 Cups Whole Milk I suggest using whole milk for these, skim milk or otherwise will make the texture too runny.
  • 1 (12.25 oz.) Jar Smucker’s Marshmallow Ice Cream Topping
  • 1 Bottle Magic Shell Chocolate Fudge
  • 6 Whole Graham Crackers

Instructions

  1. Start by adding vanilla ice cream, marshmallow topping, and milk into a blender.

  2. Blend on high for 2 minutes.

  3. Pour mixture into popsicle molds.

  4. If using popsicle sticks, cover top of molds with foil and poke sticks through top to hold in place.

  5. Place in freezer for 3 hours or until frozen solid.

  6. Remove pops from molds, and drizzle with magic shell chocolate.

  7. Before chocolate hardens, sprinkle with graham cracker crumbs.

  8. Place back in freezer for about 10 minutes to set.
