How to Make The Cutest Easter Peeps Cupcakes Recipe
1. Bake the Cupcakes
Preheat your oven and prepare your cupcake pan with cupcake liners. In a large bowl, mix the cake batter according to box directions. Divide batter evenly into muffin cups and bake. Let cupcakes cool on a wire rack to room temperature.
2. Color the Frosting
In a separate bowl, mix green food coloring into your frosting until you reach the shade you like. Use a piping bag with a large star tip for extra flair.
3. Make the Green Coconut Grass
Add shredded coconut and a few drops of green food coloring into a zip-top bag. Seal and shake until evenly coated. This part is fun for kids to help with.

4. Frost the Cupcakes
Once cooled, frost each cupcake with green frosting using your piping bag or a spatula.
5. Decorate with Peeps and Toppings
Gently press a Peep into the top of each cupcake. Sprinkle the coconut “grass” around it and top with jelly beans or sprinkles if desired. You now have the cutest Easter bunny Peep cupcakes ready to serve.
How to Serve These Easter Holiday Cupcakes
These festive cupcakes are best served at room temperature. Display them on a platter with other Easter candy, in Easter baskets, or as part of your Easter brunch or dinner table. They’re always a hit at any Easter party.
How to Store Peeps Topped Cupcakes
Store cupcakes in an airtight container for up to 3 days in the refrigerator. For longer storage, wrap each cupcake in plastic wrap and freeze for up to 3 months. Add toppings after thawing to maintain best texture and taste.

Frequently Asked Questions (FAQ’s)
Can you freeze leftover cupcakes?
Yes, these cupcakes will keep well in a freezer. To do so, wrap each cupcake with plastic wrap or aluminum foil. Place them in a resealable Ziploc bag. Be sure to put the date on the outside of the bag before placing it into the freezer for up to 3 months.
It’s best to decorate your Peeps cupcakes after you defrost them, if you’re not using the cupcakes immediately so the frosting and Easter candy taste freshest.
How do you defrost cupcakes?
I find the best way to defrost cupcakes is to unwrap them and leave them out for an hour on your counter. If you’re short on time, carefully unwrap the cupcakes and place them on a microwave safe plate. Add 30-45 seconds of heat and check them every 20-30 seconds until they’ve defrosted completely.
Are there any other alternatives to the green coconut for the grass toppings?
Yes, you can use green sprinkles if you don’t have access to shredded coconut.
If you’re looking for an easy Easter cupcake recipe with a fun twist, these Easter Peeps Cupcakes with box cake mix are it. They’re simple, cute, and the perfect Easter dessert to make with your whole family. Whether you’re baking with kids, prepping for an Easter party, or just want an excuse to use a piping bag, this recipe is a festive favorite you’ll return to every spring.
