Homemade BBQ Chicken Sliders

Ingredients

BBQ Chicken

  • 2 Boneless Skinless Chicken Breasts
  • 1 tsp. Seasoned Salt
  • 1/2 Cup of Chicken Broth
  • 2 Cups of BBQ Sauce
  • 1 Cup of Shredded Cheese I used mild cheddar, you can use any variation you like

Slider Buns

  • 4 cups self-rising purpose flour
  • 1 packet or 1 Tbsp. dry active yeast
  • 1 cup lukewarm water
  • ΒΌ cup sugar
  • 1 egg
  • 2 tbsp softened butter
  • 4 tbsp butter to use to brush before and during baking

Instructions

BBQ Chicken

  1. Add 2 Boneless Skinless Chicken Breasts, seasoned salt, 1 cup of BBQ sauce and chicken broth to slow cooker
  2. Cook on low for 6 hours
  3. Remove from slow cooker
  4. Add chicken to Hamilton Beach 14 Cup Dicing Food Processor and use 'pulse' speed to shred chicken (you can also manually shred chicken)
  5. Add remaining BBQ sauce and mix in with the chicken

Slider Buns

  1. Mix 2 cups of flour and 1/4 cup of sugar together
  2. In a separate bowl, mix yeast and warm water together. Let proof for 10 minutes.
  3. Add yeast mixture and egg to flour & sugar mixture. Mix (using dough hook or hand kneading) for 3 minutes.
  4. Add remaining flour slowly and continue mixing/kneading until dough is somewhat sticky but thoroughly mixed together.
  5. Cover with a damp tea towel and let rise for 1 hour or until doubled in size
  6. Punch down and let rise for an additional hour or until doubled in size
  7. Pre-heat oven to 350 degrees
  8. Roll dough out to approximately 3/4-1" thickness.
  9. Cut into circles (I used a coffee mug, but you can use a circular cookie cutter)
  10. Add to a lightly greased baking sheet
  11. Melt 2 tbsp. of remaining butter and brush on tops of the sliders
  12. Bake for 8 minutes
  13. Remove from oven and let cool for 10 minutes

BBQ Chicken Sliders

  1. Slice sliders after cooled for 10 minutes, set aside tops
  2. Add heaping spoonful of BBQ chicken mixture to slider
  3. Sprinkle shredded cheese on top of BBQ chicken
  4. Replace tops
  5. Melt remaining butter and brush tops
  6. Bake for 1-2 minutes or until cheese is melted
  7. Enjoy!

Recipe Notes

You can double or triple the recipe if you are having a large dinner or party.
2-3 sliders are enough for a dinner portion
