Cheesy BBQ Chicken On a Biscuit

Ingredients

  • 9 Boneless Skinless Chicken Tenderloins
  • 1 Canister 9 Biscuits Refrigerated Home style Honey Butter Biscuits
  • 2 Cup BBQ Sauce
  • 1 Cup Shredded Swiss Cheese

For Frying Chicken:

  • 1 Cup Flour
  • 1 Tsp. Salt
  • 1 Tsp. Pepper
  • 1 Cup Vegetable Oil

Instructions

  1. Pre-heat oven to 400
  2. Add 1 Cup of Oil to Frying Pan, Over Medium-High Heat
  3. Mix Flour, Salt and Pepper together in a small bowl
  4. Bread each chicken tenderloin in breading mixture, carefully coating each piece
  5. Add breaded chicken tenderloins to oil on stove top
  6. Fry chicken until cooked through the center and slightly brown on the outside
  7. Open biscuits
  8. Place one biscuit on a plate, press firmly with the palm of your hand to flatten the biscuit
  9. Once the biscuit is flattened, take a knife and cut in half
  10. Add each half to a lightly greased baking sheet
  11. Repeat for each biscuit in the canister
  12. With a pastry brush spread a thin layer of BBQ sauce across each biscuit
  13. Take fried chicken tenderloins and cut each one in half
  14. Add chicken pieces to the top of each biscuit half, slightly pressing down as you add them
  15. Brush the top of the chicken with BBQ sauce
  16. Bake on 400 for 8-10 minutes or until biscuits are thoroughly cooked
  17. Sprinkle swiss cheese on top and place in oven until melted
  18. Remove and serve
