No Bake Chocolate & Coconut Quinoa Cookies

No bake cookies are a staple in our house. They are easy, delicious and a perfect ‘go to’ dessert. 

Not only is Success Quinoa gluten free, 100 percent whole grain, a good source of fiber and a complete protein, it makes these delicious cookies even tastier.

Ingredients

– Success® Quinoa – Granulated Sugar – Coconut Oil – Unsweetened Cocoa Powder – Coconut –  Almond (Or Peanut) Butter – Vanilla Extract – Almond Extract – Unsalted Butter

Cook 1 bag Success Quinoa according to instructions on box (I used a bit of coconut oil mixed with water to boil mine in, it gives an added coconut flavor for the cookies)

In separate saucepan, combine coconut oil, almond (or peanut) butter, cocoa powder, vanilla and almond extract, butter and ¼ cup of coconut.

When Success Quinoa is done cooking, remove from water, drain (in bag), open bag and add to cocoa mixture.
