For the Cookie Dough: – unsalted butter – light brown sugar – granulated sugar – vanilla extract – large eggs – all purpose flour – cocoa powder – baking soda – salt (a pinch)
For the Topping: – evaporated milk – granulated sugar – egg yolks – unsalted butter – vanilla – sweetened coconut – chopped pecan
Step 1: Preheat the oven to 375 degrees. Cream, butter and both sugars for 3-5 mins.
Step 2: Add eggs and vanilla, beat until combined.
Step 3: Whisk dry ingredients together and add to wet mixture.
Step 4: Mix until fully incorporated.
Step 5: Using a cookie scoop, scoop cookies on each rack leaving space between
Step 6: Bake for 12-14 mins.
Step 7: Let cool on the baking sheets for 5 mins
Step 8: While the cookies are baking make the topping.
Step 9: Combine evaporated milk, granulated sugar, egg yolks and unsalted butter.
Step 10: Cook on medium heat stirring frequently.
Step 11: Remove from heat, and stir in vanilla, coconut and pecans. Let cool and add to the cookies.
