In a large bowl, add flour and make a well in the middle of the flour.

Add the active yeast and sugar to the center of the flour well.

Add warm water (110 F is the ideal temperature, aim for water no warmer than you might make a baby bottle). Don’t stir YET!

Let the instant yeast bloom for 15 minutes. The liquid will be foamy when it is ready!
