Slow Cooker Sausage and Rice Casserole

I like to joke that my slow cooker is my second husband. I spend about as much time with my slow cooker as I do my husband ha! Anyways, by now, you know that I love an easy and delicious slow cooker meal. As a busy mom, casseroles and slow cooker recipes help to save not only my time and my sanity. Recently, I had some sausage that I needed to use and was getting tired of eating it for breakfast, so I found a way to add it to our dinner rotation. This slow cooker sausage and rice casserole is a hit!

Slow Cooker Sausage and Rice Casserole
Servings 8
Ingredients
- 1 lb. mild sausage you can use hot if you prefer
- 2 Cups White Rice Uncooked
- 4 Cups Water
- 1 Tbsp. Salt
- 1 tsp. pepper
- 2 Tbsp. butter unsalted
- 1 8 oz. Can of Cream of Mushroom Soup
- 1/4 Cup diced onion
Instructions

Cook sausage and onion in slow cooker until sausage is browned (you can also cook on stove top if you prefer)

Boil 4 cups of water, add rice, reduce heat to simmer, cook until rice is cooked

Combine cooked rice, sausage, salt, pepper, and cream of mushroom soup in slow cooker

Dice butter and add to top of mixture

Cook on low for 4-6 hours
This looks amazing! I feel the same way about my Instant Pot as you do your slow cooker. Sigh. What a time to be alive! 😀
