Rich and decadent, these brownie bottom bars come together easily, and are great for parties, hostess gifts, or for welcoming that new neighbor!

What if you love all of them? Then you will want to make these brownie bottom bars! They have a rich brownie layer, a creamy cheesecake layer and the cookie crunch of Oreo sandwich cookies. I can’t imagine a better dessert.

And if you have a sweet tooth that needs to be satisfied, I think you’ll agree with me that this brownie recipe is the one you want to make today!

Ingredients you need:

  • brownie mix
  • Oreos
  • Cream cheese
  • Eggs
  • Vanilla extract
  • Granulated sugar
  • Sour cream
  • Chocolate chips
  • Heavy whipping cream

Make your brownie bottom bars

  1. Preheat oven and prepare baking pan.
  2. Make the brownie layer by following directions on the box. Pour into pan, and top with Oreos.
  3. Bake and prepare cheesecake layer.
  4. Spread cheesecake layer over brownie layer and return to oven to finish baking.
  5. Prepare the chocolate layer, then spread on top of finished brownie bars. Top with more Oreos and chill in the fridge for 2 hours.

How should I store these brownie bottom bars?

You will want to store them in an air tight container in the fridge. They will be good up to a week.

Do I have to use a brownie mix, or can I make my own?

You can absolutely use your own homemade brownie mix instead of a box mix. I like to use a box mix as it’s quicker for me, but do whatever YOU want for this. It’ll be delicious!

What Oreos should I use?

I used chocolate cream Oreos in this recipe, but feel free to use whichever you like. The double stuffed, the thin ones, and the Classic Oreos will work great.

Ingredients

  • 1 box brownie mix for 9x 13 pan
  • 22 oreos divided
  • 8 ounces cream cheese softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 2 Tablespoons sour cream
  • 1/4 cup chocolate chips
  • 1/4 cup heavy whipping cream

Instructions

  1. Preheat oven to 350 degrees. Prepare an 8 inch baking pan with non stick spray or line it with parchment paper and spray the liner.

  2. Prepare the brownie mix according to the directions on the box. Pour the batter into the prepared pan. Line the top of the batter with the 16 oreos and slightly push them into the batter. Bake this layer for 35-40 minutes, until the top is set but not completely done.

  3. Prepare the cheesecake layer by beating the cream cheese in a medium bowl until nice and smooth. Add in the sour cream and sugar and mix again until combined. Add in the egg and vanilla and mix one more time until everything is incorporated.

  4. Pour the cheesecake mixture all over the top of the brownies and spread to the edges.Bake for another 30-35 minutes, until the edges are a light brown color and the middle doesn’t jiggle. Remove and cool for 30 minutes before topping with the chocolate.

  5. Prepare the chocolate. Place the chocolate chips and heavy cream into a small saucepan and melt over medium heat. Stir constantly. Once the chocolate chips are completely melted and mixed in with the cream remove the pan from the stove and spoon all over the top of the cheesecake layer. Crush up the remaining 6 oreos and place all over the top.

  6. Refrigerate for at least 2 hours, longer if possible, cut and serve. Best if stored in the fridge.
