Who doesn’t love a delicious and healthy snack that’s easy to make ahead?

We tend to snack a lot in our house, especially with two kids running around.

While it’s easy to grab a bag of chips or other unhealthy snacks, I am trying to keep healthier snacks around. 

This delicious banana chia seed pudding is something that I like to make ahead and keep in the fridge. It’s a great way to get some good nutrients without too many calories, making it suitable for those who are following a keto or low-carb diet. 

What are Chia Seeds?

Chia seeds are a type of superfood that has become increasingly popular in recent years.

These tiny little seeds are packed with nutrients and are an excellent source of many important vitamins and minerals, including protein, iron, calcium, and omega-3 fatty acids.

They also have many health benefits, such as improving digestion and helping to regulate blood sugar levels.

Chia seeds have a high soluble fiber content, which makes them perfect for making pudding. The fiber helps to thicken the pudding and gives it a creamy texture.

The high fiber content also helps to keep you feeling full for a long while after eating it, which means that it can be helpful for weight loss. 

Where did Chia Seeds Come From? 

Chia seeds have been very popular for the past several years, but you might be wondering where they came from.

Chia seeds are the edible seeds of the Salvia Hispanica plant, a member of the mint family. This flowering mint plant is native to Mexico and Central America. 

These seeds have been used as food for thousands of years.

They were a dietary staple of the Mayan and Aztec diets and were used to promote strength and endurance.

The earliest record of chia seed consumption is 3500 B.C.

How to Make Banana Chia Seed Pudding

This banana chia seed pudding is so easy to make that you’ll wonder why you haven’t been making it all along!

Almond Milk

I like to use almond milk in my pudding, but you could also use coconut milk, dairy milk, or any other type of milk you like. Coconut milk would give your pudding some healthy fat, as well as a lightly sweetened flavor. 

Chia Seeds

While some recipes call for ground chia seed pudding, we’re leaving ours intact to add a bit of tapioca-type texture to this easy breakfast that’s so fun to slurp! It’s the perfect texture for pudding consistency.

Honey

I add a little sweetener to my pudding, but if you want it to be completely sugar-free you could leave it out.

You’ll need to mix together the chia seeds and milk in a mason jar or bowl, then you can stir in any flavorings like vanilla extract or cinnamon that you want.

Let this sit for about 20 minutes so the milk has time to absorb into the chia seeds, then give it another good stir.

You will want to leave this mixture in the fridge for a couple of hours before serving to let the milk do its thing and let the flavors marry.

You can also keep it in there overnight if you want to make it ahead. This is an easy overnight recipe for breakfast the next day, and several days after that!

When you want to serve your chia seed pudding, just add some sliced bananas and/or your favorite toppings. We love fresh berries and chopped nuts on top of ours.

How Long Will Coconut Milk Chia Pudding Stay Good? 

If you like to make your chia pudding ahead of time so that you can enjoy it for a snack or breakfast for several days.

Store the chia coconut pudding in the refrigerator for five to seven days. And you can also freeze your chia pudding in a shallow airtight container for up to six months. 

Chia Pudding Variations

If you want to make your pudding a little sweeter, but would like to keep it sugar-free, you could add a bit of sugar-free maple syrup to it.

If you aren’t worried about keeping it keto or low carb you could also use regular maple syrup.

You also don’t have to use coconut milk to make this recipe.

You could also use almond milk, soy milk, oat milk, regular milk, non-dairy milk, or any other type of milk that you have on hand. 

You can use any type of fruit that you have on hand to make this chia pudding. Fresh berries like strawberries, raspberries, or blueberries would be delicious. You could also use diced peaches or mangos to flavor your chia pudding.

You could also make amazing chia pudding with your favorite fresh fruit combinations like strawberry banana, or blueberry and pineapple. 

No fruit in the house? You can still make chia pudding! Flavor it with cinnamon or nutmeg, peanut butter, or even cocoa powder.

Adding cocoa powder and a little vanilla extract to your original recipe is a great way to turn it into a delicious dessert. Chocolate chia seed pudding is so good even your kids will love it! 

Tips for Chia Pudding 

If you want your chia pudding to be smoother, you can pop it in the blender for a minute.  

If your chia pudding is too watery and you want a thicker pudding, just add more chia seeds (one teaspoon to one tablespoon) and put it back in the refrigerator for another 30 minutes to an hour. 

Store your delicious breakfast in an airtight container in the refrigerator or if you like to make meal prep easy, in individual mason jars.

When you are ready for breakfast or a snack just pull one out. 

If you want to make enough of these for the week for you and your family you can easily double or triple this perfect healthy breakfast recipe.

It’s the best option if you need a quick breakfast on the go any day of the week.

Banana Chia Seed Pudding

Ingredients

  • 1 banana mashed
  • 2 cups coconut or almond milk
  • 2 tablespoons honey or agave
  • 1 cup Carrington Farms Organic Chia Seeds
  • 1/4 cup Carrington Farms Organic Milled Flax Seeds

Instructions

  1. In a sealable container, combine mashed banana, coconut or almond milk, and honey/agave.
  2. Close the container and shake to mix all the ingredients well.
  3. Add the chia and flax seeds and shake again.
  4. Refrigerate for at 2 hours or up to 3 days.
  5. Serve with cut bananas and a sprinkle of flax seeds on top.
